Ingredients

  • 1 tbsp olive oil
  • 1/2 small onion, finely chopped
  • 1/2 red bell pepper, chopped

  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp ground cayenne pepper (optional)
  • 1 cup canned crushed tomatoes
  • Salt and pepper to taste
  • 1 large egg
  • Fresh parsley, chopped (for garnish)
  • Crusty bread (for serving)

Cooking Instructions

  1. Place a skillet over medium heat and add 1 tbsp of olive oil.
  2. Sauté 1/2 finely chopped onion and 1/2 chopped red bell pepper until softened, about 5 minutes.
  3. Add minced garlic, 1/2 tsp ground cumin, 1/2 tsp paprika, and 1/4 tsp ground cayenne pepper. Stir for 1 minute.
  4. Pour in 1 cup crushed tomatoes. Stir and let the mixture simmer for 10 minutes, stirring occasionally.
  5. Season with salt and pepper to taste.
  6. Make a small well in the center of the sauce and crack the egg into it.
  7. Cover the skillet and let it simmer until the egg white is set but the yolk is still runny, about 5-7 minutes.
